THE SIMPLE THINGS...
The excitement of a night-time, torch lit excursion to the beach, wrapping up warm for a night in the shelter, walking the slackline, trampoline fun, relaxing in the hammock...
We're building the small experiences at No. 23, the summer house one by one over time. When you put them all together we hope they make something special.

Shelter Micro Adventure
Camping - without the tent
In the summer of 2017, we build our shelter. It came in bits delivered on the back of an articulated lorry that was too big to get up the road. The driver magically pulled a forklift out the back and shifted the piles of wood, nails and soil for the green roof to No.23. We built it a bit taller than the standard, so we had to cut everything to a special size. It was worth it. You can stand under the front roof now.
Take the sleeping mats, bags and camping blankets, lay them out, light up the fire and camp is set.
Sleeps 4 adults or a family of 5.
What is Snobrød?
Snobrød is a Danish institution. Here's a recipe from Claus Meyer, co-founder of Noma. You can see the original version in Danish here. He has developed the recipe a bit, so it's made with whole wheat flour and a handful of wild herbs.
Ingredients
Starter - Ist day
50 grams of wheat flour
50 grams of cold water
1 g yeast
Dough - 2nd day
540 grams of wheat flour
60 grams of whole wheat flour
360 grams of water (about 20 degrees)
10 grams of yeast
12 grams of salt
The dough from the day before, approx. 80 g.
To add extra flavour
50 g of solid, stored cheese, for example. Vesterhavsost (Like a Danish Gouda)
1 handful of wild herbs
Method
1st day (starter)
Mix water, yeast and flour together and leave to stand at room temperature until next day.
2nd day (Snobrød dough)
Chop the wild herbs roughly and grate the cheese. Mix all the ingredients together in a bowl. Mix the dough together by hand or with a wooden for approx. 5 min.
Let the dough rest for 15 minutes with a cloth over, stir the dough again after 5 minutes. Then put the dough aside for raising for approx. 1 hour with a cloth over.
Let the dough raise to double the size. Then it is ready.
Twist on sticks and fire up.

Nightime Hike
Take the dirt road to the beach for a swim or paddle.
Summer or winter
Step out the front door, quick right then left and you are on the beach road. Past the few other summerhouses with their thatched roofs and rosehip bushed gardens, make your way through the fields to the beach. In the Summer you can feel the gentle warm breeze coming up from the coast, slip a cold bottle of something in your bag to enjoy on the sand. In the Winter, the bracing fresh air makes you grateful for the wood burner on your return. Take a hot chocolate, you might need it.

Funghi Search
How many varieties can you spot in the wood around No.23?

16 varieties under your feet
During Autumn take down the guidebook from the shelf and track the different species of Funghi that grow in the grounds of No.23. The record so far is 16 varieties, some extremely dangerous to eat. In the future we'll find someone who knows their mushrooms to give us some guidance on which ones we can eat. Then things will get interesting.
